Summer Solstice roughly marks the time when the green walnuts are ready to be picked, cut and put into brine. Spent the day yesterday trimming off ends and dropping into brine - in between putting ourselves into the brine at Gnarabup to cool down - temp in high 30s! Halfway through & still cutting ...thank goodness it's cooler today. Love that smell of greeen walnuts!

Received a very gratifying email from one of our special customers in New South Wales over the weekend. After a few online store issues, Martin & I had corresponded by email back and forth to finalise an order of pickled walnuts & he offered to review them for us. This is what he concluded:
The texture of the pickled walnuts was by far the very best I have ever had. Each of the varieties had a distinctive difference in taste and the texture was consistent across them.
I grew up in Wales, UK, and pickled walnuts were a special treat had on rare occasions, like Xmas.
The most recent product, another brand, I purchased in Sydney was the "mushiest"I had ever tasted...that's what got me googling for a better brand. Yours truly is the best.
Is the texture the same in the Chef's Box?

People ask us how we get the shells off or why the pickled walnuts are softer than regular walnuts but did you know that when you eat a pickled walnut, you are eating the whole thing, shell and all?
The nuts are picked early, way before they are ripe, thus green & then put through a brining process ( rather like olives) , before they are pickled in various ways.
So the shell hasn't hardened and the outer covering is there too, a novel way to eat a nut.
In a nutshell, delicious!
We've been busy supplying some of the best stores in Perth with our pickled walnuts and doing instore tastings at Fresh Provisions Mt Lawley and Bicton, also at Carine Cuisine, Boatshed Markets Cottesloe, the Herdsman and the Good Grocer in Applecross. All beautiful stores that support local gourmet producers and provide unique products to help you create delicious meals. You can find all four styles of our pickled walnuts in these stores (usually in the condiments or cheese areas - or ask a friendly store assistant) and make the ordinary into special.
We have had a busy week in Perth and around the South-West stocking up stores with our newly packaged jars. You can now find our newer (larger) jars of pickled walnuts in Deli Divine Subiaco, Swanbourne IGA & Kakulas Sister Fremantle.
Our pickled walnuts will soon be on the shelves at new stockists including Cottesloe Boatshed & Carine Cuisine - we will be doing tastings in Perth soon too so keep an eye out for us!
